"The Perfect" Spicy Cherry Tomato Gazpacho
 4 cups cherry tomatoes peeled seeded and diced
1 red sweet pepper, seeded and diced
1 yellow sweet pepper, seeded and diced
3 cups tomato juice
1 jalepeno pepper, minced
2 cucumbers, peeled and diced
4 slices of bread
juice of 2 limes
1/2 cup of coriander, chopped
Salt & a generous sprinkle of The Perfect Spice
- Combine the tomatoes, bell peppers, coriander, jalepeno, tomato juice, and half the cucubmers in a bowl.
- In a food processor, puree the remaining cucumber, lime juice and bread.
- Add this to the tomato mixture and season to taste.
- Place in the refridgerator and serve chilled.
- Garnish with sliced avacado, fresh coriander, cherry tomatoes and garlic croutons.
