"The Perfect" Spicy Cherry Tomato Gazpacho

4 cups cherry tomatoes peeled seeded and diced
1 red sweet pepper, seeded and diced
1 yellow sweet pepper, seeded and diced
3 cups tomato juice
1 jalepeno pepper, minced
2 cucumbers, peeled and diced
4 slices of bread
juice of 2 limes
1/2 cup of coriander, chopped
Salt & a generous sprinkle of The Perfect Spice

  1. Combine the tomatoes, bell peppers, coriander, jalepeno, tomato juice, and half the cucubmers in a bowl.
  2. In a food processor, puree the remaining cucumber, lime juice and bread.
  3. Add this to the tomato mixture and season to taste.
  4. Place in the refridgerator and serve chilled.
  5. Garnish with sliced avacado, fresh coriander, cherry tomatoes and garlic croutons.
