"The Perfect" Breaded Fish

12 oz of sole, cod or perch
1/4 cup lemon juice
1/2 tsp salt
1/8 tsp pepper
1/2 tsp The Perfect Spice
1 clove garlic, minced
1/4 tsp oregano
6 melba, crushed and made into crumbs
Parsley and lemon slices

  1. Combine lemon juice, salt, pepper, garlic, oregano, and The Perfect Spice.
  2. Pour over fish and marinate at least 1/2 hour.
  3. Drain fish and coat with crumbs. saute in iron skillet sprayed with PAM.
  4. Garnish with parsley and lemon slices.

Makes 3 servings.
