"The Perfect" Bombay Chicken

4 - 3 oz chicken breasts
1/4 tsp paprika
1 tsp sesame seeds
1/8 tsp salt and pepper
1 orange
2 T lemon juice dissolved in 1 cup water and 1 package sweetner
1 tsp curry powder
1/4 tsp minced garlic
1/4 tsp ginger
1 tsp The Perfect Spice

  1. Arrange chicken in baking dish.
  2. Sprinkle with paprika, salt The Perfect Spice, and pepper.
  3. Grate orange peel.
  4. Add lemon juice mixture, curry, ginger, garlic, and orange rind. Mix well.
  5. Pour over chicken.
  6. Cover with foil, bake 20 minutes at 400 degrees.
  7. Turn chicken and baste well, cover and bake another 20 minutes.
  8. Remove foil, baste and add orange sections.
  9. Bake another 5 minutes to heat orange, garnish with snow peas, and serve on bed of rice.

Makes 4 servings.
