"The Perfect" Steak Creole

1 oz sirloin
1 small tomato wedged
1 small onion, cut into rings
1 red pepper cut into rings
Salt, pepper, and generous sprin of the The Perfect Spice

  1. Slice beef into medallions, discarding visible fat.
  2. Cut tomato into small wedges.
  3. Blanch onion rings in boiling water.
  4. Combine all ingredients except salt, pepper and Perfect Spice in an iron skillet.
  5. Stir andcook for about 5 minutes, untli beef is done as desired.
  6. Salt, pepper and the Perfect Spice may be added to taste.
  7. Garnnish with parsley.

Makes 3 servings.
